Our organic chicken fat isn’t just for Sunday roasts… whip it into a homemade mayo and you’ll get the creamiest, richest, most flavour-packed condiment imaginable.

Think silky texture, golden hue, and a savoury depth that regular mayo can only dream of. Spread it in a sandwich, swirl it through a salad, or do like us and dunk hot wedges straight in.

The best part though, this mayo contains a lower omega 6:3 ratio than your standards shop bought mayonnaise, thanks to swapping out the highly processed vegetable oil. We think that's a win, win.

Ingredients

  • 2 egg yolks
  • 1 Tbsp Dijon Mustard
  • Pinch Salt and pepper to season
  • 1 half lemon
  • 100ml Chicken Fat

Instructions

  1. Add the chicken fat in a pan until melted and then leave to cool completely
  2. In a bowl add the egg yolks, mustard, the juice of half a lemon and salt and pepper
  3. Whisk the ingredients together until well combined
  4. Add in the cooled chicken fat and whisk together until thickened and fluffy (we recommend using an electric whisk if you have one as this can take a while otherwise)
  5. Once it's nice and thickened, spoon your mayo into a serving bowl and enjoy
