Ingredients
- 1 knob of ghee or butter plus extra to serve
- 5 spring onions
- 500g peas
- 1 handful of lettuce, shredded
- 200g Borough Broth Grass-Fed Organic Beef Bone Broth
Instructions
- Heat up some ghee and let the spring onions soften in the pan, stirring from time to time.
- Add in the stock and bring it to a gentle boil, then turn down to simmer for a couple of minutes.
- Throw in the peas, lettuce (or any other greens that tickle your fancy), season with salt and let it reduce until the peas are as tender as you like, the greens are as soft as you like and the liquid is as reduced as you like.
- A knob of butter and a grind of black pepper round the dish off perfectly.
