Cooking
IF I USE THE BROTH IN A RECIPE, CAN I FREEZE PORTIONS?
Yes, if you use our broth as an ingredient in a recipe it becomes something new, with its own best before date. Depending on what you make, it may be suitable to portion out for freezing. Soups are especially great for this.
HOW MANY PORTIONS IN A PACK?
For our standard pouches (324g) this will serve approximately 2 small cups, 1 large mug, 1 small bowl or 2 ladles. Pho and Tonkotsu have slightly larger pouches and will usually serve 1 large or 2 small bowls.
CAN I DRINK IT COLD?
Our broths must be brought to a boil before consuming, either by cooking in a recipe or heating then drinking. Once boiled, you can cool the broth and add it to a smoothie, drink or recipe.
CAN I MICROWAVE FROM FROZEN?
We don’t advise this. Instead, please defrost fully in the fridge before microwaving to ensure even heating.
CAN I DRINK YOUR BROTHS DURING PREGNANCY?
As long as you stick to the storage and serving instructions, and use the product within the expiry date, our broths are usually suitable during pregnancy; however, please do seek your own medical advice if you’re unsure.

Ultra Processed Foods
Why do you vow not to use ultra-processed foods (UPFs) in your products?
At Borough Broth, we believe in creating nourishing, wholesome foods rooted in the principles of slow cooking and minimal processing. Ultra-processed foods (UPFs), as defined by the NOVA food classification system, often include industrially formulated ingredients with additives, flavour enhancers, and synthetic components that detract from the integrity of real, whole foods. By avoiding UPFs, we ensure every ingredient in our products remains as close to its natural state as possible, delivering true nourishment and flavour without shortcuts.
What is an ultra-processed food (UPF)?
The NOVA food classification system defines ultra-processed foods as industrial formulations that include five or more ingredients, often with added substances such as preservatives, flavour enhancers, emulsifiers, and artificial flavours. These foods undergo extensive processing to create products far removed from their natural state, prioritising shelf life, taste modification, and convenience over nutritional value.
How do you ensure your products remain flavourful without UPFs?
Our slow-cooking process extracts deep, natural flavours from our organic ingredients. By using traditional methods such as roasting bones, simmering broths for up to 24 hours, and combining carefully selected herbs and spices, we create products that deliver exceptional flavour without relying on artificial or industrially processed shortcuts.
Are products containing yeast extract considered ultra-processed?
Yes, products that include yeast extract are classified as ultra-processed foods (UPFs) according to the NOVA classification system, even if the yeast extract is organic. While yeast extract begins with fermentation—a natural process—it undergoes additional industrial procedures that elevate it to ultra-processed status. These processes include:
- Autolysis: Breaking down yeast cells using their own enzymes to release internal components.
- Centrifugation: Separating and refining specific elements such as amino acids and peptides.
- Concentration: Producing a potent flavour enhancer rich in free glutamates.
These steps go beyond traditional fermentation, transforming the ingredient into a refined additive designed to intensify flavour. The NOVA classification system defines ultra-processed foods as industrial formulations, and yeast extract aligns with this due to its production methods and role as a flavour enhancer.
For more information on the NOVA classification system and its criteria, you can refer to this guide https://www.elizabethrider.com/nova-food-classification-system-guide/
At Borough Broth, we avoid ultra-processed ingredients like yeast extract, even when organic, to stay true to our commitment to wholesome, minimally processed food.
