Christmas Bread Sauce

Bread sauce might not steal the spotlight, but it’s the quiet hero of the Christmas table. Creamy, subtly spiced, and perfect for mopping up gravy, it’s an essential side that I’ve loved since I was a kid. Adding a little chicken fat gives it a depth of flavour that elevates the whole plate. Honestly, I can’t imagine Christmas without it.

Ingredients

  • 1 onion, peeled and halved
  • 4 cloves
  • 2 bay leaves
  • 500ml whole milk
  • 100g fresh white breadcrumbs
  • 1 pinch salt and pepper to taste
  • 2 tbsp double cream (for extra richness) - optional
  • 1/4 freshly grated nutmeg - optional
  • 2 tbsp Borough Broth Organic Chicken Fat

Instructions

  1. Stud the onion halves with the cloves.
  2. In a saucepan, add the whole milk, clove-studded onion, and bay leaves.
  3. Gently heat the milk until it starts to simmer. Remove from heat and let it infuse for 10–15 minutes.
  4. Remove the onion and bay leaves from the infused milk.
  5. Return the saucepan to low heat and stir in the breadcrumbs, allowing them to soak up the milk and thicken the sauce.
  6. Stir in the chicken fat to give the sauce a rich flavour.
  7. For extra creaminess, stir in the double cream (optional).
  8. Season with salt, pepper, and a pinch of freshly grated nutmeg if desired.
  9. Let the sauce simmer gently for 5–10 minutes, stirring occasionally, until smooth and thick.
  10. Transfer the bread sauce to a serving bowl and serve warm alongside the roast turkey and other trimmings.
