Curly Kale Quinoa Salad

Ingredients
- ½ cup quinoa
- 3 handfuls of curly kale
- 1 mango
- 1 handful of strawberries
- 1 avocado
- 1 handful cashew nuts
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 324g (1 pouch) Borough Broth Organic Chicken Bone Broth
Instructions
- Add quinoa and broth to a pan and cook according to quinoa packet instructions and leave to cool.
- In a small bowl, combine the lemon juice, olive oil, salt and black pepper to create the dressing.
- Wash and cut curly kale and add to a large bowl and top with the dressing and massage into the kale.
- Add the quinoa to the kale and mix together.
- Cut the strawberries, mango and avocado and add to the large bowl.
- Sprinkle the cashew nuts and top and mix together, and serve in smaller bowls.
