German Potato Salad

Ingredients
- 750g new potatoes, washed and boiled with skins on until tender
- ½ white onion, peeled and finely chopped
- 1 tsp French mustard
- 1 tsp Dijon mustard
- 4 tbsp extra virgin olive oil
- 1 tbsp white wine vinegar
- ½ tsp sea salt
- 110g Borough Broth Free-Range Organic Chicken Bone Broth
Instructions
- Slice the potatoes into thin circles and place in a salad bowl.
- Heat the broth as per back of packaging
- Mix together the onion, mustard, oil, vinegar, broth and salt with a fork, then add this to the potatoes and let it soak in.
