This is the ultimate thick, umami-packed chicken gravy that is very reminiscent of a famous fast-food classic. It's perfect drizzled over mashed potato, roast dinners, or anything that just needs a little extra comfort. We’ve blended butter and our traditional chicken cooking fat to give the roux a deep, golden colour, before adding in our beef and chicken broths, a touch of thyme, onion, and white pepper to recreate that nostalgic flavour.

Ingredients

  • 50g butter
  • 5 tbsp plain flour
  • ½ tsp onion powder
  • ½ tsp white pepper
  • 1 tsp dried thyme
  • Pinch of Maldon sea salt
  • 1 pouch of Organic Free-range Chicken Bone Broth
  • 1 pouch of Organic Grass-fed Beef Bone Broth
  • 50g Organic Free-range Chicken Fat

Instructions

  1. Place the butter and chicken fat into the saucepan and place over a medium high heat
  2. When the butter is foaming add in the flour and stir well. Continue to cook this for around 5-6 minutes or until the roux begins to smell quite nutty and turns a deep golden brown colour. Make sure to stir constantly
  3. Remove the pan from the heat and gradually pour in broth whilst whisking continuously
  4. Place the pan back onto the heat and bring the gravy up to a gentle simmer. Add in the onion powder, white pepper, dried thyme and a generous pinch of Maldon sea salt to taste
  5. Simmer for 5 minutes or until the gravy is lovely and thick. Remove from the heat and give it one final taste test, adding a little more salt if needed
  6. Served poured generously over creamy mashed potato and tender chicken thighs
