Herby Chicken Gravy
Ingredients
- 50g butter
- 5 tbsp plain flour
- ½ tsp onion powder
- ½ tsp white pepper
- 1 tsp dried thyme
- Pinch of Maldon sea salt
- 1 pouch of Organic Free-range Chicken Bone Broth
- 1 pouch of Organic Grass-fed Beef Bone Broth
- 50g Organic Free-range Chicken Fat
Instructions
- Place the butter and chicken fat into the saucepan and place over a medium high heat
- When the butter is foaming add in the flour and stir well. Continue to cook this for around 5-6 minutes or until the roux begins to smell quite nutty and turns a deep golden brown colour. Make sure to stir constantly
- Remove the pan from the heat and gradually pour in broth whilst whisking continuously
- Place the pan back onto the heat and bring the gravy up to a gentle simmer. Add in the onion powder, white pepper, dried thyme and a generous pinch of Maldon sea salt to taste
- Simmer for 5 minutes or until the gravy is lovely and thick. Remove from the heat and give it one final taste test, adding a little more salt if needed
- Served poured generously over creamy mashed potato and tender chicken thighs
