Christmas Lemon Lardy Peas

Ingredients
- 500g peas (fresh or frozen)
- 1 lemon (juice and rind)
- 1 pinch salt and pepper to taste
- 1 small handful fresh herbs (such as parsley or mint) for garnish - optional
- 2 tbsp Borough Broth Organic Pork Fat
Instructions
- If using fresh peas, bring a pot of salted water to a boil and add the peas. Cook for 3–5 minutes until tender, then drain.
- If using frozen peas, steam or boil them according to package instructions, then drain.
- In a small pan, melt the pork fat over low heat until it becomes liquid and fragrant.
- In a serving bowl, toss the cooked peas with the melted pork fat until they are well-coated.
- Peel some of the lemon rind over the peas ensuring not to include the bitter white pith.
- Squeeze the juice of 1 lemon over the peas and mix well.
- Season with salt and pepper to taste.
- Optionally, garnish with fresh herbs such as parsley or mint for added flavour and freshness.
- Serve hot alongside your Christmas meal.
