Christmas Lemon Lardy Peas

I first made these peas by accident, using pork lard leftover from another recipe. The result? A revelation. Bright, zesty lemon balances the richness of the lard, turning simple peas into something unforgettable. They’re quick, but they’ll leave a lasting impression.

Ingredients

  • 500g peas (fresh or frozen)
  • 1 lemon (juice and rind)
  • 1 pinch salt and pepper to taste
  • 1 small handful fresh herbs (such as parsley or mint) for garnish - optional
  • 2 tbsp Borough Broth Organic Pork Fat

Instructions

  1. If using fresh peas, bring a pot of salted water to a boil and add the peas. Cook for 3–5 minutes until tender, then drain.
  2. If using frozen peas, steam or boil them according to package instructions, then drain.
  3. In a small pan, melt the pork fat over low heat until it becomes liquid and fragrant.
  4. In a serving bowl, toss the cooked peas with the melted pork fat until they are well-coated.
  5. Peel some of the lemon rind over the peas ensuring not to include the bitter white pith.
  6. Squeeze the juice of 1 lemon over the peas and mix well.
  7. Season with salt and pepper to taste.
  8. Optionally, garnish with fresh herbs such as parsley or mint for added flavour and freshness.
  9. Serve hot alongside your Christmas meal.
