Christmas Super Fluffy Beef Fat Roast Potatoes

Ingredients
- 1.5kg potatoes (such as Maris Piper or King Edward), peeled and cut into large chunks
- 1 pinch salt to taste
- 1 pinch freshly ground black pepper (optional)
- 4 tbsp Borough Broth Organic Beef Fat
Instructions
- Preheat your oven to 200°C (400°F).
- Parboil the Potatoes: Bring a large pot of salted water to a boil.
- Add the potato chunks and parboil them for 10–12 minutes, until the edges start to soften but the potatoes are still firm in the centre.
- Drain the potatoes in a colander, then give them a good shake to roughen up the edges. This will help them get extra crispy when roasted.
- Heat the Beef Fat: While the potatoes are parboiling, place the beef fat in a large roasting tray and heat it in the oven for about 5–10 minutes until it's smoking hot.
- Toss the Potatoes in Hot Fat: Carefully remove the tray with the hot beef fat from the oven.
- Add the parboiled, roughened potatoes to the tray, tossing them gently to coat each piece in the hot fat. Be cautious, as the fat will be extremely hot.
- Season generously with salt, and optionally with pepper.
- Roast the Potatoes: Roast the potatoes in the preheated oven for 1–1.5 hours, turning them halfway through the cooking time to ensure even crispiness.
- The potatoes should be golden brown and crispy on the outside, and soft and fluffy on the inside.
- Serve: Once fully roasted, transfer the crispy roast potatoes to a serving dish and sprinkle with a bit of extra salt if desired. Serve immediately.
