White Wine Chicken Pan Sauce

Transform chicken into something special with this quick, flavour-packed pan sauce. Using the golden, caramelised bits left in the pan after roasting, a splash of white wine, and our bone broth cubes, this pan sauce comes together in just a few minutes. We like to serve it spooned generously over pan-fried organic free-range chicken, roasted potatoes and seasonal veg.

Instructions

  1. After cooking your chicken in the pan, set it aside to rest. Put the pan back on a medium heat.
  2. Add the wine to the same pan and scrape any caramelised bits of meat at the bottom of the pan into the wine. Let the wine reduce until the bubbles thicken and the liquid feels slightly sticky around the edges. This takes about 2 minutes.
  3. Add in the sprig of thyme or rosemary and the bone broth cubes. Reduce again until the sauce feels glossy and can coat the back of a spoon in a thin but shiny layer. This usually takes 3 to 4 minutes.
  4. Once thickened, whisk in the butter to create a more luxurious finish. Taste and adjust the seasoning if needed.
  5. Pour generously over your rested chicken and serve with roasted potatoes and seasonal greens.
