water and 2 tbsp apple cider vinegar or lemon juice for soaking
1 pouch (324g) organic beef or chicken bone broth
1 ltr water
2 tbsp ghee or coconut oil or cooking fat of choice
1 onion, diced
1 thumb-sized piece of ginger, grated
3 cloves garlic, grated/crushed
1.5 tsp ground cumin
1 tsp ground coriander
1 tsp chilli powder (Kashmiri chilli powder is ideal)
0.5 tsp ground turmeric
0.5 tsp black pepper
1 tomato, chopped
300g frozen spinach

2.5 tbsp tamarind paste
1-2 tsp coconut sugar (or other sugar)
1 tin coconut milk

8 curry leaves
