Everyday Chicken and Sweetcorn Ramen

This super-versatile ramen recipe has been created using just a few simple store cupboard ingredients. Combining the classic flavours of chicken, sweetcorn, mushrooms with delicious Organic Tonkotsu Ramen Broth adds interest to your weeknight suppers or working lunches. Missing an ingredient or two? Don’t worry, feel free to substitute or swap it out entirely.

Serves: 1 large or 2 small bowls
Cooking time: 20 minutes


1 nest of dried noodles

*mushrooms, cooked & sliced

*tamari soy sauce

1 can of sweetcorn

*spring onions, sliced

*chilli flakes 

1 ramen or boiled egg

*chicken, cooked & sliced

1 pouch (450g) Borough Broth Co. Organic Tonkotsu Ramen Broth

*quantities can be adjusted to suit portion size


  1. To begin, prepare the mushrooms by cooking them and then slicing and soaking them in tamari soy sauce.
  2. Bring a pan of water to the boil and cook the noodles according to the packet instructions. Once cooked, drain and add to a large bowl.
  3. Place another large pan on the hob, add the Tonkotsu broth and bring to a boil. Once heated through, turn off the heat and leave for one minute before pouring over the noodles.
  4. Then add a few slices of your cooked chicken to the broth, followed by the mushrooms, sweetcorn, spring onions and ramen egg.
  5. Finish by sprinkling some chilli flakes over the top and serve. Simply delicious!
